How much caviar should I order?

For a focused tasting, plan about 30 grams per guest. For passed bites or garnish service, you can use less. If caviar is the main event, increase the portion so guests can enjoy more than one serving.

What should I buy first?

Kaluga and Ossetra are excellent starting points because they show the creamy, nutty, and mineral qualities people associate with fine caviar.

How should I store it?

Refrigerate immediately, keep tins sealed until service, and avoid freezing unless specific producer instructions say otherwise.

Can I use a metal spoon?

Traditional service uses mother-of-pearl, horn, glass, or ceramic. We do not recommend metal spoons — reactive metals can affect flavor and are against our house standard.
